Marc Fosh has lived and worked in Spain for over twenty years as a chef, helming his Marc Fosh restaurant in Palma de Mallorca which was awarded a Michelin Star in 2014. Today his restaurant combines Michelin Starred cooking with a modern, relaxed and contemporary space in the stylish surroundings of the 17th century Hotel Convent de la Missió.
In his new book ‘Modern Mediterranean: Sun-drenched recipes from Mallorca and beyond’, available in July, he takes us on a tour of the bountiful produce of the Mediterranean and shows us how to harness its flavours in new and exciting ways.

The 18 chapters are organised by key ingredient from tomatoes, garlic, almonds and olive oil to octopus, chorizo, saffron and truffles. Recipes feature new twists on old classic dishes, such as Yellow Gazpacho with Smoked Salmon and Avocado or Saffron, as well as some less familiar fare, including Herb-roasted Guineafowl with Couscous Salad and Sobrassada and Honey Croquettes with Almond Aioli.
